Slow Cooker Beef Vegetable Soup

Today I am making vegetable beef soup.  It’s a foggy, grey day (although the forecast said sunny and in the 60s), so it’s a good soup day.  I made this for my whole family at Christmas and it went over really well.  It’s super easy and delicious!

1 lb sirloin tip, fat trimmed
28 oz can crushed tomatoes
2 packets beef & onion soup mix
1 can corn, undrained
1 can green beans, undrained
1 can carrots, undrained
1 can sliced potatoes, undrained

Cut meat into bite sized pieces.  Combine stew meat, tomatoes and soup mix in crock pot.  Cook on low 6-8 hours.  Add remaining 4 cans for last 2 hours cooking time.  Add salt and pepper if desired.  Serve with cornbread.

*I use the stew meat that is already cut up and trim into smaller pieces if necessary.
